Sunday I finished up a crocheted bow headband and decided to take a few photo booth pictures to show it off. I also ended up making another one the next day in pumpkin & yellow but I haven’t photographed it yet. I’m going to be putting them up on etsy in the next couple days along with a few other things I’ve been working on. I already put up the necklaces I made and one sold (Thanks Marijah!) and another is in convo right now. I’m really excited about this!

Did I mention I got a haircut!? I’m really loving it and i’ve been curling it up every chance I get.
Alex came home and wanted to do some photoboofin too so we had a few minutes of family boofin. Then we decided “enough with the BOOFIN!” so we went out for drinks with some friends.


I could probably do the 365 project of Rory – he’s that entertaining to me.
The weather here in Portland is beginning to show signs of the impending coming of fall. I can’t wait! Autumn is definitely my favorite time of year, but I’m especially excited to experience our first fall in the Northwest. My excitement inspired me to pick up a bag of apples and put together a Vegan Apple Crisp recipe I found on theppk.com. My house smelled like one of those great apple-spice-yummy-fall candles… now I think I need to get one to avoid baking daily.


I used a little bit more raisins that specified because I cut down some of the sugar and because I love raisins.

Nom Nom Nom I eat you up! We added some soy ice cream and it was pure magic! Next time I think i’ll peel the apples; I tried to keep them on for the vitamins but I’m such a weirdo about textures that I found myself picking off the skin anyway.

My not-so-supportive kitchen helper…
Ever since we’ve been in Portland I’ve been taking mental note of each Chipotle I see, sad I know. It’s weird to have an addiction to a company owned by McDonalds but I have such a love for Chipotle that cannot be tainted!
Reasons why I love Chipotle:
1. Guacamole and I have a very serious relationship and Chipotle’s does not disappoint. While some complain that the guac costs extra on their tacos – this is one time when being a veg has its advantages, GUAC IS FREE for when you’re not chompin the meat! I have to restrain myself on my avocado intake sometimes, I could probably eat one per day if it weren’t for the fat content.
2. Some of my most fond memories I had in Austin were with my coworkers/friends and our weekly Game Night ritual at our nearby Chipotle. Mix a number of crazy fun people, powerful Chipotle margaritas, and numerous board games… it’s fun. Maybe one day we’ll all be in the same place again and resurrect our Game Night.
3. That brings me to the Chipotle margaritas, not every location has them but if you find one that does… be careful of how many you order. Seriously strong but sooo delicious. My penny pinching wallet usually asks for a water cup and puts half the drink in each cup and fills the rest with lemonade. Deeeelicious!
4. Their tacos are so TASTY! My Chipotle order: Soft Corn Tortilla Tacos, Rice, Black Beans, Fajita Veggies, Corn Salsa, Guacamole (DUHHH), lettuce. Now.. I’m hungry!
I think my most favorite cookie is the oatmeal-raisin, so when I found this veganized version on Vegan Yum Yum I decided to try to put my past failed baking experiments aside and give these a try. I pulled out the old mixer that my mom gave me in hopes it would compensate for my lack of skills. The results were pretty great, Alex approved about 10 of them and took the rest to work. After dessert was made – I made dinner of Gnocchi with zucchini, peas, button mushrooms, onions, and marinara. A very tasty day!
I love the vintage green coloring, don’t mind the the little bits of rust/oil.

After hours of working to have this blog revved up and ready to go, I think I’m close enough to get the show on the road! I recently moved to Portland and have found myself with a fair bit of free time at the moment and decided it was about time I get myself back in the loop of blogging, and with a vengeance! My days are currently being filled with crafting, bike riding, web browsing, job hunting and other less than productive tasks.
Yesterday I baked a cake for my husband Alex’s birthday. He requested a chocolate cake with reese’s pieces candy, and I think the result was a success.
